Ms. Duangjai, 59 years old, a resident of Ban Chong Kho, Rang Ka Yai Subdistrict, Phimai District, Nakhon Ratchasima Province, grows galangal along the fence of her house. It takes about 6-10 months to grow galangal before she can dig it up and sell it. Young galangal that is dug up at 6 months old has a delicious taste, while old galangal that is 8 months old or older has a less delicious taste. Ms. Duangjai's method of digging galangal starts with digging 1 clump of galangal, which has about 25 plants. Then, she d igs it out to leave 5 plants per clump so that the galangal can grow and produce in the next generation. After washing the galangal, trimming the roots, and cutting the plants to about 1 cubit long, she will dry them and pack them into bags to sell for 20 baht per bag.
