COA to promote local mozzarella cheese production with new courses

The Council of Agriculture (COA) has designed a pair of courses to teach mozzarella cheese-making techniques in an effort to bolster an industry that is still in its early stages in Taiwan.

In a press release Thursday, the COA’s Livestock Research Institute said it had developed “professional” and “simplified” versions of the course after completing its own research into the production of the mild southern Italian cheese.

According to the institute, the professional version of the course will function as a technology transfer for established food manufacturers interested in producing mozzarella.

The simplified curriculum, meanwhile, is designed for use by schools as well as organizations involved in food and agriculture education, research and promotion, the institute said.

Institute Director Huang Jeng-fang (???) noted that feedback was extremely positive in pilot versions of the courses, with many participants commenting on how rare such classes are in Taiwan.

In the press release, the institute said it has historically done relatively little research on cheese compared with other dairy products.

However, it is now looking to change that, it said, as food preferences in Taiwan diversify and a local cheese industry has begun to take root.
